Panzanella Salad Recipe



I posted this picture on Instagram last night, and had some requests for the recipe. Y'all...this is seriously one of my most favorite things in the whole wide world. It's so fresh and delicious and perfect for eating outside in the warm weather (except it's freezing here and we don't have an outdoor area).

Anyway, make this soon - I bet it'll become your new favorite thing, too!


Panzanella Salad
Original Recipe by Ina Garten and modifications in bold by me

Ingredients:
3 tablespoons good olive oil
1 small French bread or boule, cut into 1-inch cubes (6 cups)
1 teaspoon kosher salt
2 large, ripe tomatoes, cut into 1-inch cubes (I used a little pack of heirloom cherry tomatoes from Trader Joe's and they were so good)
1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick (I just peeled a big cucumber and chopped it up into little 1/2 inch pieces...I don't think you have to seed it)
1 red bell pepper, seeded and cut into 1-inch cubes
1 yellow bell pepper, seeded and cut into 1-inch cubes
1/2 red onion, cut in 1/2 and thinly sliced
20 large basil leaves, coarsely chopped
3 tablespoons capers, drained (I never use these in this salad)


For the vinaigrette:
1 teaspoon finely minced garlic
1/2 teaspoon Dijon mustard
3 tablespoons Champagne vinegar (I use either Red Wine Vinegar, or Balsamic...whatever I'm feeling!)
1/2 cup good olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper


Directions:
Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.

For the vinaigrette, whisk all the ingredients together.

In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

crazy, creative girl!

I just came across this article by Kim Phillips, and loved it so much I just had to repost it! I have always been the crazy, creative type, and I am each and every one of these things. This makes me laugh because Joe always wonders how I can have so many little projects going on and how my brain is always filled with so many diferent ideas.

10 things

I've seen a few bloggers do this, and thought it was so much fun. I have loved getting to know all of them better, so hopefully this let you get to know be better as well!


1 - I absolutely can't sleep with socks on, or with my hair up. 

2 - My first two concerts were Vince Gill with my mom, and Aerosmith with my dad. How cool was he to take a 6th grader to see Aerosmith??

3 - My most favorite food in the whole world would have to be pickles. Sweet Gherkins and fried dill chips are the best, but I usually don't discriminate! My mom told me that when I was little, she would have to avoid the pickle aisle so I wouldn't have a meltdown about wanting more pickles.

4 - My freshman year of college, I got SO sick. I went on Spring Break with my girlfriends, and ended up passing out at the Carolina Cup. I knew I didn't have that much to drink, so we knew something was seriously wrong. I had a crazy intense form of Mono, and along with that came Pneumonia and Hepatitis. I had to medically withdraw from Spring semester, and spent like 3 months straight in the bed.

5 - I have slept with my green blankie since I got it in elementary school...it even came with me on my honeymoon to Aruba (Joe sure loved that!)

6 - I'm 6 feet tall, but was never really into basketball or volleyball. 

7 - I talk to my dog Charlie like he's a human and carry on full conversations with him. 


8 - I've been obsessed with weddings for as long as I can remember. I can remember idolizing every bride at weddings I went to, and walking to Winn Dixie with my friends in elementary/middle school and buying wedding magazines when everyone else was buying Tiger Beat. I got married 3 years ago, and I still buy wedding magazines.


9 - I always said I would absolutely never get a tattoo. I was little miss priss and thought they were awful....then I got one on a whim last year. It's a blackbird that not only represnts my obsession for The Beatles, but also reminds me of the lyrics of my favorite song of theirs and makes me so proud of myself for moving so far away from home and being on our own. "Blackbird singing in the dead of night, take these broken wings and learn to fly, all your life, you were only waiting for this moment to arise."

10 - I'm still driving the same car my parents got for me when I got my driver's license at 15. The poor girl has been through a lot in New York, so I think we may be saying goodbye to her soon! :(

Birthday Weekend in NYC: BFF's Come to Town!


My sweet friend, Courtney, and I met on a playground when we were babies, and have been besties ever since. She was born one day before me, so you can imagine how much fun we had celebrating our birthdays growing up! Two of our favorite joint parties were the pool party at the local YWCA (it was March, so we had to have it indoors,) and our very first boy/girl party in 6th grade in our neighborhood's clubhouse...those were the days! We decided to kick it up a notch this year, and celebrate in style in New York City!

Our other BFFs and long time friends, Sasha and Tori, came and so did Court's boy toy, Will. It was so stinking fun that I wish we could get together more often...I hate living so far away from them! :(  We were super organized, and made plans and restaurant reservations so we could try and fit as much as possible into our weekend in the city.

Friday (Courtney's Birthday) - We woke up early and had delicious NY bagels and mimosas while getting ready (6 people all using one shower and one toilet) and finally made it to Grand Central by lunch time. We had lunch at Lombardi's - apparently it's America's first pizzeria?? - and it was just meh. Wouldn't you expect to have the best pizza of your life at America's First Pizzeria?? Plus, it was ridiculously expensive. My advice to you - stick to the cheap pizza places in the city!

After our pizza and delicious Peronis, we headed over to SoHo to do some shopping. Those cobblestone streets get me every time! We got tricked into buying way too many soaps, scrubs, and lotions at Sabon (damn you free hand treatment!) and also dipped into Dash (the Kardashians' store) and immediately regretted it. After shopping, we went downtown to the 9/11 memorial. I've been there a few times before, and it is always very emotional. I don't have any pictures, because I always felt disrespectful taking any; but it was nice to be there on such a beautiful day.


After our adventures downtown, we went back to our hotel for the night and took a quick nap/got ready. Poor Sasha was stuck in the hotel all night with a stomach bug, so Court, Tori, Will, and I went to my absolute favorite place ever (and Justin Timberlake's favorite place, too)...PAPATZUL! If you live in NYC, or are just visiting...do yourself a favor and go eat there! And order the Cochinita Pibil and a margarita on the rocks with salt...You will dream about it for months and months to come. Promise!

After dinner, we partied it up at 40/40 (Jay-Z's club) for Courtney's birthday. This place was out of control. We had so much fun dancing and we didn't want to go home!

Saturday morning, (my birthday) we were all a little under the weather and slowly got up and got ready for brunch at one of my other most favorite places in the city, Essex. Their food is amazing (get the Mexican Matzo Brei) and who doesn't love free drinks with your meal? We all had mimosas, but their bloody mary's are delish, too. Best brunch place in the city, by far!




After brunch, we walked down to the South Street Seaport for the million dollar views of the Brooklyn Bridge. I love taking all of my visitors there for pictures! The Sea Port was badly damaged by Hurricane Sandy, so it wasn't as fun as usual (fun restaurants/bars, stores, street art vendors, etc) but it was still an amazing view! 



We cabbed it back uptown to Times Square so Tori and Will could catch a glimpse of the craziness, then we walked over to Rockefeller Center and went up to the Top of the Rock. I've now done both the Empire State Building and the Top of the Rock, and I think I definitely preferred the latter! You have an awesome view of the Empire State Building from TotR and the lines were WAY faster.

After that, we hopped on a train in Grand Central back to White Plains, and went out for sushi (my favorite!) and afterwards, to a couple of our favorite bars. Such a fun way to celebrate my birthday!



Sunday, was filled with a delicious brunch at Sarabeth's in Tribeca, shopping at Bloomingdales and H&M, walking through Central Park, and some good ol' cheap pizza for dinner.

After dinner, we went to the Gotham Comedy Club where we witnessed the street being blocked off and firemen/policemen trying to talk a jumper from a ledge above the club (it was a success). Never a dull moment in NYC. Anyway, Fortune Feimster from the Chelsea Handler Show was headlining so we thought it was fun to check it out. It was so incredibly raunchy, but I don't think I've ever laughed so hard in my life. Can't wait to go back for more.

PS. This guy deserves an award. He put up with us all weekend and never once complained. (Joe was stuck doing work at school, so Will was on his own most of the time) What a keeper!

What I'm Loving Wednesday!



Haven't done this in a while, so I thought it would be fun to share what I'm loving lately:




{1} My sweet Mama came to visit for Easter! Since we are moving soon, she wanted to come up and explore the city one last time before we head up to Albany. The weekend was quickly dubbed "Murphy's Law Weekend," because everything that could go wrong, did! She somehow got an awful stomach bug, and was sick as a dog for pretty much the whole weekend...so we stayed in my apartment the whole time! I booked her ticket about a month ago, and we could have sworn that her flight left LaGuardia at 6pm on Easter, so we packed up all of her stuff and headed to the airport, only to realize her flight was MONDAY at 6pm. I don't know what in the world happened, I must have lost my mind the day I booked her ticket. Anyway, I was glad to have more time with her, so we headed to the grocery store to get the fixin's for a nice Easter dinner, and when we got there, it was CLOSED! After riding all over town looking for an open grocery store, we finally found Whole Foods and got things for a ridiculously expensive meal. Finally back at home, we were putting the mac and cheese in the over, and I heard Mom screaming in the kitchen. Poor thing had broken the door off of our ancient oven, and had to hold it closed the rest of the time to let the ham and mac&cheese cook. It's a good thing we can make the most out of anything! :)


{2} FINALLY...a Lulie Wallace of my very own. Sure, it may just be a print, but if you refer to the post before this, us girls on a budget have to have pretty art somehow! I'm dying for a custom LW original of my wedding bouquet, but this pretty print will do for now. Right now it's proudly displayed on my mantel, and it makes me so incredibly happy! (Also loving this cheapo frame from Michael's thanks to Bryn's advice!)


{3} Charlie doesn't usually ever get people food, but I was chopping lettuce for a salad the other day and was curious if he would eat some, so I handed him a piece of Romaine and you would have thought I just gave him the best damn food in the entire universe. He is now obsessed with lettuce and carrots... so those are his treats when he's being sweet. SO funny.



{4} New luggage from my parents for my birthday! I've been using the same pink monogrammed Vera Bradley bags that I've had since 9th grade (over 10 years!) and it held up well until about a month ago when it couldn't take my overpacking anymore and the zippers busted off. I have nice rolling suitcases, but I needed some pretty bags for quick trips. My sweet mama ordered me the pretty Vera Bradley carry on, and a {much more grown up looking than my old stuff} huge monogrammed black duffel. Now I just need a vacation so I can use them...


{5} Some of my VERY best friends from SC came to visit for my birthday and it was seriously one of the best weekends ever!! Will be doing a whole post about the weekend, but I love this picture, so I had to share!


{6} I made a quick trip up to Albany to take some pictures of our new loft, and snapped this picture of the gorgeous Capitol building on my way out of town. Doesn't it look like a castle?? Love that we can see a little sliver of this pretty building from our new place!


{7} Seriously loving my hunky {almost lawyer} husband. He graduates in 1 month and 4 days {not that I'm counting or anything} and we are so stinking excited! Law School has been awful and wonderful all at the same time, so it's bittersweet that he is almost done, but I sure will be happy to actually get to spend time with him again!!!

Affordable Art Sources



Being an art major in college, and an art lover - nothing makes me happier than to have beautiful pieces adorning my walls. I have been very slowly adding some original art to our collection (including some of my own!), but have lately been finding lots of gorgeous art prints that are a lot more budget friendly, but just as pretty! I'm all for splurging on an original piece if you have the money, but if you are like me, you probably want to know where to find some inexpensive art! When we first moved into our apartment, I wished someone had a list like this, so hopefully this will help someone else!

Thank the Lord for Etsy. Can a get an AMEN?? I seriously love that site and I love supporting the wonderful artists and small businesses there. Please, oh please, stop buying your art at big box stores (Bed Bath and Beyond, Target, World Market, etc.) and check out the fabulous things you can buy on Etsy...from REAL, hardworking people! (Sorry! Can you tell I'm passionate about that??) Anyway, I've been compiling a list of my favorite Etsy artists/sellers and I am going to share my finds with you!

{Michelle Armas}




I'm a little obsessed with Michelle Armas' work! Her abstract paintings are so beautiful. Since I can't afford her original work right now, her prints are right up my alley! I would love a huge, colorful print framed for behind my couch!





Alison Fennel of Eastwitching is so incredibly talented! I originally found her flamingo prints in an issue of Southern Living, so I ordered one for myself! She is so sweet and added a handwritten note and a sweet little notecard with an elephant print on it that I have since framed.  I love all of her watercolor animal prints, and am thinking about adding that pretty fox print above to our collection! These would also  be so great in a nursery!

Clare Elsaesser of tastes orangey is AMAZING! Her work evokes so many emotions, and I love how moody some of the prints are. I just discovered this artist a few days ago, but I am already planning on getting the above prints for our new loft.




{Kari Herer}



Kari Herer is an extremely talented artist and photographer, and her work has been featured in magazines such as Martha Stewart, Town and Country, and InStyle.  I love everything she does, but I especially love her Flora and Illustrations. Aren't they so refreshing? Might have to make the magnolia one mine...reminds me of home!

I have been a long time fan of Gretchen Kelly's figure drawings. These are all original sketches done with a live model, and most of these only took her 1 minute. So talented! Contemplating one of these nudes for our new bathroom...love the colors!

Love Anne's work! My favorite is the blue and white plate watercolor above...reminds me of my Mema's china! She has some great watercolor prints of interior renderings!

Great letterpressed stuff! Absolutely love the state prints, and I really love the "things that are tall" print above! They also have a great selection of letterpressed cards...you can send to a friend or frame for yourself!
